Austria\u2019s Gault&Millau culinary guide describes Restaurant Pfefferm\u00fchle\u2019s signature style as a refreshing philosophy without extravagant gimmicks. We like to think of it as a dogma-free approach to regional cuisine. Our chef has travelled far and wide, which has made him all the more aware of his homeland \u2013 a constant presence in the tradition, freshness and spirit that shapes every plate. In 2024, Gault&Millau awarded Restaurant Pfefferm\u00fchle two toques.<\/p>\n\n\n\n

Think carabineros prawn with fruity curry, pickled golden beet, tomato, ginger, and Indian mountain pepper, or pigeon \u00e0 la royale with pear, parsnip, fried onion, and smoked Malabar pepper. There is no reason to worry that the food will be excessively spicy \u2013 chef Christian Wild has a light touch with the pepper, so it enhances the flavour without overpowering it.
